Holiday Cookie Recipe!

If you’re looking for a last minute holiday cookie recipe, we've got you covered!

Ingredients

1 ¾ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon fine salt
¾  cup unsalted butter, softened
2/3 cup sugar
1 large egg
1 teaspoon pure vanilla extract
¼  cup raspberry, cherry or strawberry jam

Directions

Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or silicone mats
Whisk the flour, baking powder and salt together in a bowl
In another bowl, whip the butter and sugar together with a hand-held mixer until fluffy, about 5 minutes. Beat in the egg and vanilla until just combined. Slowly beat in the dry ingredients in 2 additions, mixing until just incorporated.
Scoop dough out into 1 inch balls with an ice cream scooper and roll in sugar. Place cookies 2 inches apart on baking sheets. Press a thumbprint into the center of each ball, about ½ an inch deep. Fill each indentation with ¾ teaspoon of jam of your choice.
Bake cookies until golden, about 15 minutes. Cool cookies on a baking sheet and serve!

MTA Considers Raising LIRR Tickets by 15%!

The MTA (Metropolitan Transportation Authority) has reported that a Long Island Rail Road ticket (LIRR) could go up by as much as 15% per ticket by March 2013.
The new proposal by the MTA has other incentives coming along with the price hike including discounts for military personnel and the Family Fare program. Ticket prices will increase between 7.1 percent and 15.3 percent depending on the type of ticket and the location from where you’re traveling.

The MTA board will be voting on Wednesday and it is expected that the increases will be approved.

Hurricane Sandy 12.12.12 Benefit Concert will Take Over MSG Tonight!

Madison Square Garden will be packed tonight for the highly anticipated 12.12.12 concert. Tonight’s concert will be featuring some of the biggest names in the music industry and was formed to benefit those people affected by Hurricane Sandy. All proceeds will go to the Robin Hood Relief Fund.

Some of the performers include Billy Joel, Bon Jovi, Eric Clapton, the Who, the Rolling Stones, Paul McCartney, Alicia Keys, Kanye West, Bruce Springsteen and the E Street Band and Chris Martin!

There are many ways to get involved and contribute to this great cause. Jon Bon Jovi said, “This storm lasted a day. The effects of it are going to last a lifetime.” Billy Joel added, “I’m a Long Islander, proud to be an Islander. To see something like this happen is devastating.”

Nassau County Executive Ed Mangano hopes that Long Island residents will support local merchants in their communities this holiday season, especially because of Super-storm Sandy. With the holiday season in full swing, what better way to show your support? Mangano believes this is the best way you can show your support and help your local community. 

Mangano said, “As we continue to recover and begin the rebuilding process, we have to pause and remember our local merchants.” Many businesses and communities were devastated by Sandy and need the help of the people in their communities to get their feet back on the ground. Many of these merchants stress the how important it is to buy locally to support the tax base and help keep jobs at home.

Come Support the Adelphi University Basketball Teams Tonight!

Do you have plans for this evening? How about coming out and supporting the Adelphi University Men’s and Women’s Basketball teams in their match ups against Pace University!

The Lady Panthers (4-2) will tip off against the Pace University Setters (5-1) at 5:30 p.m. at the Center for Recreation and Sport at the Garden City campus. The Men’s game will begin at 7:30 p.m. The men currently hold a 2-5 record, and hope to pull out a big win over the Setters this evening!
